A Granola Without Grains
For some, giving up cereal in the morning is almost unthinkable. “But, what do you eat in the morning?” is not an uncommon question to hear when you tell people that you don’t eat grains. At least, I’ve heard it a lot. Cereal was not a big loss for me; milk has always made me sick, so I just didn’t bother most of the time anyway. My kids, however…oh boy. So when I decided to try eating paleo, I worked out this recipe to satisfy them. There are a lot like it – this is just my version. At my house, this stuff is now called “Mommy Crunch.”
Don’t over fill your bowl – you’ll be surprised how filling this granola is! It’s great with coconut milk. I actually like it as a dessert.
By the way – I have three kids, so I make things in large batches. This recipe makes a lot. Halve everything if you don’t have a brood like mine to feed!
2 cups Whole Almonds, Raw
2 cups Walnuts, Raw
1 cup Macadamias, Raw
2 cups Pecan Halves, Raw
1 cup Pepitas, Raw
3/4 cup Sunflower Seeds, Raw
1 cup Almond Meal
1/2 cup Coconut Oil
1/2 cup Raw Honey
3 tsp Vanilla Extract
1 1/2 tsp Cinnamon
1 1/2 tsp Nutmeg
1 cup Unsweetned Shredded/Slivered Coconut (optional)
Preheat oven to 325 degrees.
Chop all nuts, pepitas, and sunflower seeds to the size you prefer. I like to keep things chunky. Mix all nuts and almond meal together on a pre-oiled (use a little coconut oil here, too) large baking sheet or shallow baking pan.
On the stove, combine coconut oil, honey, vanilla, cinnamon, and nutmeg until everything is melted. The spices will stay somewhat separated. Remove from heat for a few minutes to let cool. Stir thoroughly once more, then pour over the nut mixture.
Mix everything together, making sure the nut mixture is well covered with the oil/honey mixture. Press evenly into baking sheet or pan. Bake for about 25 min.
Allow to cool somewhat, then break apart. Mix in shredded/slivered coconut if you are using. Store in an airtight container.
